Mi'Sofrito Criollo

Bella Silva-Pagan was born in Puerto Rico and raised in Yonkers, New York. Her mother taught her to cook and she loved the different aromas of her dishes. She would use a sauce as a base in many of her dishes called sofrito. As Bella grew older and started cooking for herself, she came up with a recipe for sofrito of her own. She moved to Cincinnati to be closer to her kids, where she discovered Jungle Jim’s International Market. Here she found the unique ingredients she needed for her special sauce. She now sells her puree and her delicious Latin dishes at Findlay Market, and at Jungle Jim’s International Market in Fairfield and Eastgate. She dreams of branching out to a commercial buffet truck, where she can sell her delicious food all over the country.
